Hyderabadi Khichdi with Methi Sprouts

Hyderabadi Khichdi is one amazing dish from my beautiful City that no one can ever say no if given a treat to this. Iam sure everyone will definitely love to dig into it. It's simple. It's lovely looking and it's made in a very simple way too. I have given it a little twist by adding Methi Sprouts or Fenugreek Sprouts thereby creating a healthy meal by all means. And i served it with just a dollop of Ghee because nothing was actually needed. There was no need of any extra accompaniment as we Hyderabadis usually have. This was a perfect meal in itself. It was so yummy that iam at short of words to describe the feeling. This was my first try at using Fenugreek for a complete meal as i thought my kids may not like it. But they received it so very well. Iam happy about it and will definitely love to feed them again. Happy Cooking with Zee!

Ingredients

30 minutes
5 servings
  1. 1 1/2 cupFenugreek Sprouts
  2. 400 gmsRice
  3. 1/4 cupRed Lentils or Masoor Daal
  4. 1 tspTurmeric powder
  5. 1Onion finely chopped
  6. 2 tspGinger garlic paste
  7. 1 tspCaraway Seeds or Shahjeera
  8. 2Cardamoms
  9. 1" Cinnamon stick
  10. 3-4Green Chillies, whole
  11. 1 bunchCoriander Leaves finely chopped
  12. 3-4 tbspOil

Steps

    Clean and wash both Rice and Red Lentils thoroughly. Soak them in enough water and set aside.

    Heat Oil in a cooking pot. Add Cardamoms, Cinnamon stick and Caraway Seeds with Turmeric powder. Fry for a few seconds. Also add Ginger garlic paste, Green Chillies and Onions. Saute them until light brown. I added 2 Dry Red Chillies too for flavour. It's optional.

    Keep the heat on a low. After done, add Fenugreek Sprouts. Mix lightly and fry for a minute or two. And finally add chopped Coriander Leaves too. Add water according to the Rice taken. Bring it to a rolling boil on a high heat. Add Salt according to taste.

    Drain the water in which Rice and Lentils were soaked. Add them to the boiling water carefully. Mix well and let it cook on a high heat at first for the first 5 minutes. Then lower the heat and let it cook well covered. In between give it a light stir.

    It gets done very easily. Water should be added according to the quality of Rice. I did not add much. And there is nothing to panic because we cover it and cook. The steam helps it in getting cooked evenly. And it gets done very quickly too. Enjoy it on it's own. Happy Mealtimes!
