My sister, a fellow diabetic, came up with this and it’s everything I love!! ANYONE would love this! So easy to make and very filling. The servings depend on how many mushrooms you need to make. This has 16 net carbs.

Ingredients

20 minutes
1 serving
  1. 1portobello mushroom cap, cleaned of gills and drizzled with olive oil, salt and pepper
  2. 1 cupfrozen hash browns per cap
  3. 1 cupbrowned, seasoned and drained ground beef and onions
  4. Shredded cheddar cheese, divided. Put some in the filling and leave some for the top. As much as you want
  5. Sour cream optional

Cooking Instructions

20 minutes
  1. 1

    Preheat oven to 400. Mix all the above ingredients in a bowl. Pile and mound on top of mushroom cap. Place in oven for about 15-20 minutes. Remove and add cheddar to the top and back in the oven to melt. I dolloped mine with sour cream. It finishes with wonderful crispies.

Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
