Spinach Pesto Pasta with Peas

Ingredients

  1. 1 lbpasta
  2. 4 cupslightly packed baby spinach
  3. 1/3 cupolive oil
  4. Juice of 1 lemon
  5. 1/2 cupgrated Parmesan
  6. 1/2 cuproasted sunflower seeds
  7. 2 cupsfrozen peas

Cooking Instructions

15 minutes
  1. 1

    Cook pasta according to directions. Drain the pasta over the peas in a colander. The peas will thaw immediately. Return noodles and peas to the pot.

    While the water is heating up, add spinach, olive oil, lemon juice, Parmesan, and seeds into a blender. Blend until smooth.

    Toss pesto with noodles and peas. Serve with additional Parmesan.
