Ooo this is a go-to of mine and its never coming off the list! Love the creaminess, the color, and the flavorrrr. Sometimes i add an avocado to the pesto but thats if im feeling a little fancy (^.^)

Ingredients

1 hour
4 servings
  1. 1large bunch Tuscan kale
  2. 12 oz.pasta (your choice!)
  3. 1/3 cupnuts (pistachios, cashews, etc.)
  4. 1/3 cupwater
  5. 1/4 cupoil
  6. 2garlic cloves
  7. 1 oz.parmesan cheese
  8. 2 tbspunsalted butter
  9. salt and pepper to taste

    Remove the stems and ribs of the kale.

    Cook the kale in a pot of boiling salted water. Take it out after 30 seconds or when it turns a vibrant green. Don't drain the water! After the kale has cooled a little, wring out any excess water.

    Cook your pasta in the water until it is al dente. Reserve some pasta water as well.

    In a blender, puree the garlic, oil, water, and nuts until very smooth. Add the kale and parmesan into the blender and blend until smooth. Add a tbsp of water at a time as needed.

    Mix together the pasta, butter, and pesto. Add little amounts of pasta water until you reach your desired consistency. And... its done!

If you never have tried swiss- chard you should try to find some and make a pesto outta that. Swiss chard is delicious! I have always grown my own swisschard because it is not easy to find but it is great!
