Steps
- 1
Heat a deep thick bottom kadai. In it add ghee. When the ghee heats up add to it the illaichi
- 2
When illaichi splutters to it add grated carrots and stir it nice for 5 minutes.
- 3
Then after stirring keep the kadai covered for 5 more minutes. Let the carrot cook in its own juice.
- 4
Then open the steel cover and to it add a bowl of homemade malai and stir again nicely for 2 minutes so the malai mix with the carrots.
- 5
After the malai has mixed add a bowl of milk and stir again for 2 to 3 minutes.
- 6
Keep it covered again. The milk, malai and grated carrots will cook together for another 7 to 8 minutes.
- 7
Then open the cover and check the status of the halwa and add the sugar and mix again. The sugar will dissolve.
- 8
Allow it to cook uncovered till the milk and juices evapourate. When you stir it you will feel the halwa is cooked properly.
- 9
Switch off the gas. Serve the halwa with chopped nuts and raisins.
