Put winter melon in the pan when ginger turns brown. Stir for a minute, add water, put lid on to cook at low heat until winter melon almost transparent. Add salt and stir (you can add 1 tablespoon soy sauce and 1 teaspoon sugar instead of salt). Turn off the fire.
