This recipe is a modified version of the one from Gastronomos of Kathimerini, but it's excellent!

Clean and cut the graviera cheese into pieces about the thickness of a finger.

Marinate the graviera cheese in the tsipouro for 10-15 minutes.

Add the paprika, cayenne, and ginger to the flour and mix.

Dip the graviera cheese in ice-cold water and then in the flour mixture, repeating twice.

Fry in hot oil until the crust is golden brown.

Using a hand mixer, blend the lemon juice, wine, and honey until the mixture is smooth.

Pour the sauce over the graviera cheese while it's hot and serve.

If desired, sprinkle with black sesame seeds.
