Coconut Filling by mixing 2 cups grated coconut with 3/4 cup jaggery &and cardamom and a splash of milk. Cook until it becomes a sticky, semi-solid paste. Let it cool; it will thicken further.

Step - 4: The Art, Making the Pitha: 1. Lightly grease a non-stick pan with a drop of ghee using a piece of a brush. 2. Use a spoon to drizzle the coloured batter in a pattern (swirls/dots) & set for 15secs. 3. Pour a ladle of the plain batter over the pattern, swirling the pan to create a thin circle on low heat. 4. Once the top looks dry (about 45–60secs), place a small cylinder of the filling on one edge. 5. Gently roll the crepe over the filling and press the edge with a spatula to seal it.
