Slice the garlic and remove the core. Cut the chicken into bite-sized pieces and marinate with 1 tablespoon of sake.

Put the plain flour and curry powder into a plastic bag and shake to mix evenly. Then add chicken chunks and shake to coat.

Heat the sesame oil in a frying pan and add sliced garlic. Fry over medium heat until fragrant, then add chicken chunks skin side down and cook for about 6 minutes. Move the sliced garlic to the side, and if the garlic starts burning, take out and set aside.

Turn chicken chunks over and cook another 5-6 minutes to cook through. Remove any excess oil with kitchen paper and add the sauce. Cook over high heat and coat the chicken with the sauce.
