To start the filling, heat 4 tablespoons of vegetable oil in a pan, add the 4 chopped onions, and a pinch of salt. Stir until the onions soften and change color slightly.

Add 1 1/2 pounds of ground beef, stir, then add salt, seven spices, cinnamon, and a bit of black pepper. Stir until the filling is cooked, let it cool, then add the chopped walnuts and sumac, mixing well.

Meanwhile, wash the bulgur and soak it in water for ten minutes, then drain and set aside.

Chop 2 onions into cubes and add them to the bulgur along with 1 pound of lean ground beef, cumin, salt, kibbeh spices, and crushed red pepper. Process in a food processor until it forms a moldable dough.

Grease the tray with olive oil, spread the first layer of kibbeh dough, then evenly distribute the filling. Spread the second layer of dough, cut it into neat shapes, and brush the top with olive oil.

Preheat the oven to 400°F and bake for 30 minutes until done. Enjoy!
