The Lazy (no-bake cookie pie)

In Lithuania we call it The Lazy - originaly it contains crashed cookies mixed with ganache. But this time, after Christmas Eve I had left overs of some cookies we bake in Lithuania always only for Christmas Eve (flour, poppies, water and yeast). So it fitted perfectly here! Ant the left overs of condesed milk after baking my previous poppie curd cake (which was two months ago 🤦‍♀️) was also nicely used here! 🎉
I have seen some recipes of The Lazy with extra nuts or dried fruts. Curd is also unusual ingridient, though a bit healthier (I use to calm down myself like that) 🙃 In butter mixture could be also added cacao - if pie without chocolate isn’t a pie 🤷‍♀️
I hope proportions are good, because everyting was made on my eye 🤭

Ingredients

30 min + cooling time
5-7 servings
  • 350 gcurd
  • 100 gsour cream
  • 120 gbutter
  • 180 gcondensed milk
  • 400 gsimple cookies/crackers

Steps

30 min + cooling time
  1. 1

    Melt butter and mix it well with condensed milk.

  2. 2

    Blend curd with sour cream.

  3. 3

    Mix blended curd with melted butter mixture. Then add crashed cookies. I always crush it with fingers, but internet is full with videos of crushing cookies many other ways 🧚🏻‍♀️

  4. 4

    I roll mixture in baking paper in form of sausage. Or You can use baking form coverd with baking paper, so it would be easier to pull it out. Leave it in the fridge overnight.

Cooking was always my tiny passion. Althougt I’ve started with main dishes, now I enjoy creating something sweet. The biggest problem with main dishes is that I don’t use recipes so it’s difficult to share something, although I’d like to. That’s the reason why I didn’t used to cook sweets - because there is no way to improvise. Though on Your first steps :)Nice to meet You all, hope to find and share something amazing here!
