Avocado Ice Cream with Vegetable Based Ingredients Only

My friend said she makes avocado ice cream from milk and honey. I wanted to make a healthier ice cream, so I used soy milk and maple syrup instead.
The oil makes the ice cream smoother in texture. You can leave the oil out of course, but the ice cream will be harder. Recipe by Saikomame

Cut all the way around the avocado pit lengthwise. Split the avocado in half and remove the pit. Take the flesh out with a spoon, and drizzle lemon juice over.

Put the avocado, soy milk, maple syrup and the oil in a food processor and blend well.

When it has cooled a bit, chill in the freezer. I took it out from the freezer after a while, blended it again and put it back in the freezer.
