Ingredients

15-20mins
  1. 250 gmsButton Mushrooms
  2. 100 gmsPortobello Mushrooms
  3. 25 gmsdried Porcini mushrooms(if available)- soaked in warm water
  4. 2 tbspOlive Oil
  5. 2medium sized Onions
  6. 4-5 clovesGarlic
  7. 2medium stalks Celery
  8. 1medium stalk Leek
  9. 1/4 cupwhite wine
  10. Few or 1 /2 tbspsprigs fresh Thyme dried Thyme
  11. 100 mlVegetable stock

Cooking Instructions

15-20mins
  1. 1

    Slice the Mushrooms and keep them aside.

    Roughly chop Onions, Leeks, Celery, and Garlic cloves.

  3. 3

    In a pan pour Olive Oil and add sliced Onions, Leeks, Celery, and Garlic. Let them sweat.

  4. 4

    Add Mushrooms and turn on the heat to high. Saute the mushrooms and allow them to cook.

  5. 5

    Add sprigs of thyme to the pan and let it do its magic(thyme completely takes the mushroom to another level)

  6. 6

    While cooking, mushrooms will automatically lose their water, let it dry and de-glaze the pan with wine, and let that depth of flavors of wine steep into the mushrooms.

    To the pan, add vegetable stock and let it simmer for 10 mins.

    Take out the mixture from the pan and let it cool.

  9. 9

    Remove Thyme sprigs and Puree the mixture until smooth.

  10. 10

    Your versatile Mushroom Puree is ready to go with your favorites.
