Cooking Instructions

Slice the Mushrooms and keep them aside.

Roughly chop Onions, Leeks, Celery, and Garlic cloves.

In a pan pour Olive Oil and add sliced Onions, Leeks, Celery, and Garlic. Let them sweat.

Add Mushrooms and turn on the heat to high. Saute the mushrooms and allow them to cook.

Add sprigs of thyme to the pan and let it do its magic(thyme completely takes the mushroom to another level)

While cooking, mushrooms will automatically lose their water, let it dry and de-glaze the pan with wine, and let that depth of flavors of wine steep into the mushrooms.

To the pan, add vegetable stock and let it simmer for 10 mins.

Take out the mixture from the pan and let it cool.

Remove Thyme sprigs and Puree the mixture until smooth.

Your versatile Mushroom Puree is ready to go with your favorites.

You know that cooking hack where you turn a can of Campbell's cream of mushroom soup into a sauce? My mom used it all the time, usually to top steak (which in our house was always cooked to well-done, and really needed a sauce), and occasionally as a braise for chicken or pork chops. Well, this is a homemade version of that hack. It may read as a little fussy, especially with the making of the mushroom stock. Truth be told, I only did that because I had an extra bag of older mushrooms that weren't very appealing anymore but hadn't actually gone bad. I don't know how much they added to the dish, but I know they didn't hurt it. I am a huge fan of mushroom soup. As much as I remember, I used to survive on Campbell's mushroom soup during my military years. That and some instant ramen. I had experimented, researched and tasted my fair share of mushroom soups. Eventually, I had settled for Heston Blumenthal's version. I love how he adds potatoes to enhance the creaminess of the soup and also the stacking aroma from the addition of leeks.I used a varieties of mushrooms instead of just one. There are so many to choose from, the wild expensive to the underrated cheaper ones. In the end, I settled for my 2 favorite; shiitake and Swiss brown button mushrooms. What really stands out here is Heston blitz some dried mushrooms into powder and act as a garnish. It really kicks this soup up a notch. Before drooling over that, let's get started with the recipe.
