Twisted Sweet and Salty Cookies

I was craving some lightly textured cookies.
Adding salt makes the dough quite stretchy. That's why you'll be able to twist the dough.
You won't really taste the salt, but it will give a light aftertaste. I'd say 1 pinch is approximately 1 g.

Mix the vegetable oil, milk, sugar, and salt in a bowl.

Add cake flour and mix lightly.

When the dough becomes smooth, transfer it into a plastic bag. (It becomes lumpy depending on the humidity and room temperature. Don't worry if it becomes rather floury.)

Roll it out with a rolling pin. Fold it in horizontally, and roll it out again. Repeat 3 times. When the dough becomes even, shape into a rectangle and even it out so that it's 1-2 mm thick overall.

Sprinkle the granulated sugar on one side. Press it down with your hands on the top of the plastic bag.

Cut into 4 cm x 1 cm pieces. Twist each piece 2 times.

Bake for 12-15 minutes at a 160℃ oven to finish!! (I used a gas oven.)

You can make different variations using cocoa, cinnamon, powdered coconut, kinako, coffee, black tea, and skim milk.

Here are two variations together: plain and coffee. These ones are a bit overbaked...

I think you can twist them 3 times. For the coating, I used sugar crystals that are rougher than granulated sugar. They're super sparkly!

I chopped the dough into 10cm × 3mm × 3mm pieces. Then I coated them with chocolate and diced almonds to make almond "Pocky".
