If using frozen squid, thaw completely and pat dry with paper towels to remove any excess water. Set aside.

Chop the parsley leaves and set aside. Wash, peel, and dice the garlic and onion.

Heat a drizzle of extra virgin olive oil in a pan. Add only the garlic and onion. Sauté until translucent.

Add the squid pieces. Stir and season with salt and pepper to taste. Add the bay leaves, chopped parsley leaves, and the white wine. Cook over medium heat, cover, and simmer for about 15 minutes.

When the liquid starts to reduce, stir and add the sweet paprika and tomato sauce.

Mix well, cover again, and cook for another 15-20 minutes, making sure it doesn't stick or dry out. When the sauce reaches your desired thickness, turn off the heat and let it rest uncovered for a few minutes.

Adjust salt if needed. Serve as is or with your favorite side dish.
