Potato Cakes

Perfect way of using up old mash potato. Generally any leftover mashed potato would just go in the bin in our house but I'm trying to be conscious of food wastage and use as much of the leftovers as possible instead of throwing them away.
They are good hot or cold, though I personally prefer them cold.

Perfect way of using up old mash potato. Generally any leftover mashed potato would just go in the bin in our house but I'm trying to be conscious of food wastage and use as much of the leftovers as possible instead of throwing them away.

Steps

Use a fork to break up the cold mash then place it in a bowl.

Mix the mash with the flour, spring onions, salt and pepper. If the dough is too wet and sticky add extra flour and if its too dry add a tablespoon of milk. Mix it all together really well.

Form the dough into balls slightly smaller than a golf ball. With your hand or back of a spoon flatten each ball.

Over medium heat, heat a pan and add a knob of butter.

Once melted add the potato cakes. Leave plenty of space to turn the cakes. Fry on each side for 2-3 minutes.

May need to be cooked in batches, if so then wipe the pan down with kitchen paper and melt new butter and repeat.
