Bathua ki kachori

Wash bathua leaves and boil with 1glass of water I n pressure cooker. After 1 whistle off the flame. After releasing steam open the lid andkeep it in colander.

Heat oil in a pan. Add hing and cumin seeds. When it's crackled add boiled bathua saag.add salt and red chilli powder and mix. Cook till all the moisture evaporates. Remove from heat and keep it in a plate.

In a bowl add wheat flour, add 1/2 tsp salt and ajwain and make a soft dough adding with sufficient water. Cover and rest for 5 minutes. After 5 minutes make small sized ball from dough. Flattened and fill small portion of cooked bathua into middle of the poori.

Cover it and roll it with rolling pin and make round shape kachori. Heat oil in a kadhai and fry prepared kachori.

Fry till golden brown in color from both the side. Make all kachori like this.

Serve this bathua leaves kachori with aaloo ki sabzi and Turmarind chutney.
