Melt 3.5 oz dark chocolate with 1/3 cup heavy cream (about 100 ml) in a double boiler. Divide the mixture evenly among small serving glasses. Chill in the refrigerator for 30 minutes.

Melt the white chocolate in a double boiler. Whip the remaining cold heavy cream until stiff peaks form, then gently fold in the melted white chocolate.

Take the glasses out of the fridge and add the second layer. Chill again for at least 1 hour.

Melt the milk chocolate, then mix in the 2 egg yolks. Beat the egg whites until stiff peaks form and gently fold them into the chocolate mixture.

Take the glasses out of the fridge and add the third layer. Chill for at least 1 more hour.
