Mexican Cheesy Parathas

In a bowl, add maida & half tsp salt & ajwain. Mix everything well. Now gradually add water & kneed a semi-soft dough. Then atlast add a tsp of oil and kneed the dough once again. Now rest it by covering it with a damp cloth for about half an hour.

Now for making the filling, take a pan, add a tbsp of butter. Heat it then add chopped onion, chopped green chilies, chopped bell pepper, chopped capsicum, boiled corn, some salt, and sugar. Stir-fry them for about a minute or two. keep this mixture aside.

Now make 4 balls out of the dough. Take a ball & roll it into a paratha. Then make pieces of a cheese slice & spread it on one side of the paratha. Then take 2 tbsp of filling and spread over it as shown in the image below. Sprinkle some chili flakes & mixed herbs over it. Add some shredded mozzarella cheese. Finally, add some tomato ketchup over it.

Now cover it from another side of the paratha, which is left & seal it with the help of a fork as shown in the image below.

Now heat a tawa, add some butter and fry the parathas by gently pressing them & by flipping them & frying it from both sides, until it turns golden brown in color. Repeat the same process with the rest of the parathas.

Your Mexican Cheesy Parathas are now ready to serve. I have served it with some mayonnaise & with some Paneer Tikka. You can have it as it is.
