Over a gentle heat dissolve the sugar into the water. Don’t boil it, and stir continuously until it’s dissolved. Leave to cool completely.

In a large jug add the mint, lime juice and ice. Use the end of a rolling pin or wooden spoon to mash up the ice and mint.

Add the rum and 3-4 Tbsp of the sugar syrup (depends on how sweet you’d like it) to the jug.

Pour the mixture about halfway into a glass and top up with the soda water and enjoy your evening!
