I have always loved tomatoes, but my wife only likes cooked tomatoes. So we compromised, and we started making tomato soup. Its now a staple in our house, and we eat it all the time.

I have always loved tomatoes, but my wife only likes cooked tomatoes. So we compromised, and we started making tomato soup. Its now a staple in our house, and we eat it all the time.
Steps

Preheat oven to 350 degrees

Line two cooking sheets with aluminum foil
- 3
Wash tomatoes, and cut in half or fourths depending on size

Peal garlic

Place tomatoes and garlic onto the cooking sheets, and coat with olive oil, and salt and pepper.

Roast tomatoes and garlic for 45 minutes. Rotate cooking sheets halfway through to prevent burning.

With 10 min left on the tomatoes, cut onion and add to dutch oven with a small amount of olive oil.

Caramelize onions (about 20 min), and pull tomatoes out of oven to cool.

Once onions are caramelized add tomatoes and garlic to pot.

Blend with hand blender until smooth.

Bring to a boil, and allow to simmer for 45 min.

Add salt and pepper to taste.

Serve with parmasan cheese, and enjoy.
