Ingredients

  • 1 cupCumin seed
  • 1 cupcoriander seed
  • 1 TablespoonBlack pepper whole
  • 1 teaspooncloves
  • 3,4long Cinnamon Stick
  • 8,10Curry leaves
  • 1 inchJavitri
  • 1nutmug
  • Red chilli whole or crushed as your taste

Steps

  1. 1

    Heat the frying pan on medium low flame, add cumin seeds and roast on very low heat until lightly turn the colour or you feel the aroma of spices, keep aside and let it cool

    Add coriander seeds on same pan and roast it until lightly golden don't cook too much
    Keep a check on the spices and stir constantly or else they could burn and turn bitter. keep aside and let it cool

    Add black Pepper, cloves, and curry leaves roast in same pan until you feel aroma, keep aside and let it cool.

    Roast the Chillies or Chilli flakes,
    Be careful dont roast too much heat it few seconds only it might feel unpleasant.

    Heat the cinnamon Stick, nutmeg and javitri separately and even grande it separately because these spices take more time to grande,

    Then add all spices together in a blender, blend and grande them nicely.

    Put in airtight container or a jar,
    Soo that it should not loos the aroma.
