Set all the ingredients clean and chop them as indicated on each ingredient above separately. Just make sure you remove capsicums seeds before chopping

In a non-stick pan on a source of heat add 2tsn of cooking oil then add eggplant, courgette, red, yellow & green capsicums and a pinch of salt and stir them for about three minutes (till half cooked) and set a side

In a cooking pan on a source of heat add about 2tsn of cooking oil then add red and white onions fry them till almost golden brown

Add garlic paste and fry till they are golden brown

Add tomato grated paste fry as you stir till it forms a paste

Add the tossed vegetables into the mixture, mix them as they cook and absorb for about 3minutes

It's ready to serve! Enjoy!
