Tender & Juicy! Sauteed Chicken Breast with Salt

I wanted to make the chicken more tender than my previous recipe, so I added mayonnaise to the marinade. The resultant chicken was very tender as I had expected.

Tender & Juicy! Sauteed Chicken Breast with Salt

Steps

Slice the chicken breast diagonally into 1-cm thickness. Cut each in half lengthways ( for thin oblongs).

Add Step 1 into a bowl with sake, sugar, salt, mayonnaise and pepper. Mix well and let it sit for a while.

Add the katakuriko to Step 2 and stir well.

Heat vegetable oil in a frying pan and arrange the Step 3 chicken breast. Cover with a lid and cook over medium heat for about 2 minutes.

After the chicken starts to brown, remove the lid. Turn over the chicken pieces and cover with the lid. Continue to cook over a low heat for 1 minute.

Turn the heat off and leave to stand for 1 minute, still covered with the lid.

Remove the lid and add the julienned shiso leaves and transfer to a serving dish.
