Light Korokke - Baked Japanese Potato Croquettes

Korokke is a popular yōshoku dish (Western-style Japanese cuisine 🇯🇵) originally inspired by French croquettes 🇫🇷. The main ingredient in korokke is potato 🥔, so it's also very similar to Italian potato croquettes 🇮🇹.

I had a huge new potato left in my pantry and needed to use it, so I decided to make korokke with ingredients I already had at home. This is also a lighter recipe: korokke are usually fried, but I baked them instead 🎊

Ingredients

5 patties
  • 9 oznew potato (about 250 grams)
  • 1 1/2 ozonion (about 40 grams)
  • 3/4 ozham (about 20 grams)
  • 3 1/2 tablespoonsmilk (50 ml)
  • 1 tablespoongrated Parmesan cheese
  • Salt and pepper
  • as neededShredded cheese (for filling),
  • For the coating
  • 1/3 cupJapanese panko breadcrumbs (about 40 grams)
  • 1 1/2 teaspoonsolive oil
  • 1/2beaten egg
  • 1 tablespoonall-purpose flour

Steps

  1. 1

    Cut the peeled potatoes into small pieces and place them in a bowl of water. Change the water several times.

  2. 2

    Add the panko to a skillet and toast over low heat, stirring constantly, until crispy and golden brown. Remove from heat and mix well with the olive oil.

    Mix the beaten egg and flour together until smooth.

    Finely chop the onion and ham. Add a little olive oil to a skillet and cook them over medium heat until the onion is soft.

    Drain the potatoes. Cover the bowl with plastic wrap and microwave the potatoes for about 6 minutes at 600W.

    Mash the potatoes with a fork. Add the onion and ham, milk, Parmesan, and a little salt and pepper. Mix very well.

    Form 5 patties from the mixture. You can add some cheese to the center of each patty if you like.

    Dip the patties in the egg and flour mixture, then coat with the panko. Line a baking sheet with parchment paper and place the patties on it.

    Bake the patties in a preheated oven at 400°F (200°C) for about 20 minutes.
