‘Kimu-Taku’ Rice

When I first heard about ‘Kimu-Taku Rice’ which is very popular in Nagano prefecture, Japan, I thought it was related to a Japanese star Kimura Takuya aka ‘Kimu-Taku’ who is an actor and also a member of an idol group SMAP. I was very wrong. ‘Kimu-Taku’ stands for ‘Kimuchi (Kimchi) and Takuan (Japanese pickled daikon radish) and it is a fried rice dish. I never tried it in Japan, so I don’t know how close my recipe is to the authentic Nagano’s ‘Kimu-Taku Rice’ but it is certainly delicious!

Ingredients

1 serving
  • 1bowlful of Cooked Rice
  • 1Pork Steak (about 100g)
  • 1-2 teaspoonsSesame Oil
  • Salt
  • 2tablespoonfuls of Kimchi *OR as much as you want
  • 3-4 cmTakuan (Japanese Pickled Daikon Radish) *OR as much as you want
  • 1-2 teaspoonsSoy Sauce
  • Spring Onion *finely chopped
  • Toasted Sesame Seeds

Steps

  1. 1

    Thinly slice Pork Steak. Cut Daikon in half or quarter lengthways and slice thinly.

  2. 2

    Heat Sesame Oil in a frypan over medium heat, cook Pork with a pinch of Salt. When Pork changed colour, add Kimchi and Takuan and cook until well combined.

  3. 3

    Add rice and cook stirring and season with Soy Sauce. Do not add too much Soy Sauce because Kimchi and Takuan are already salty.

  4. 4

    Sprinkle some finely chopped Spring Onion and Toasted Sesame Seeds.

What a great idea! As a kid, I always had kimchi fried rice, and then we ate takuan with other things like udon, but it never occurred to me to put kimchi and takuan in fried rice. I'll have to try this sometime. Thanks!
