Ingredients

30 biscuits
  • 1 3/4 cupsflour
  • 1 1/4 cupsoats
  • 1 1/2 teaspoonsbicarbonate of soda
  • 3/4 cupsugar
  • 2 tablespoonsgolden syrup
  • 1 1/4 cupsbutter
  • 3 tablespoonsmilk
  • 1 cupnuts and seeds (
  • 1 cupany nuts/ seeds

Steps

  1. 1

    Food process the oats until they look like breadcrumbs, quite well broken up

  2. 2

    Add the rest of the dry ingredients to the food processor and combine

  3. 3

    Melt the butter in the microwave and pour into the dry ingredients, along with the golden syrup, blend to combine

  4. 4

    Add the milk and the nuts and seeds, how chopped up the nuts are will depend on how long you mix it, I prefer mine quite fine

  5. 5

    Put the mix in the fridge to cool, get out two baking trays and cut baking parchment to fit

  6. 6

    Once the mix is cooled, preheat the oven to 180°c and spoon the mixture into the trays, taking around a tablespoon and rolling between your hands to form balls. leave space for the mixture to spread out

  7. 7

    Cook for 12 - 20 minutes, if you cool them for a shorter time they'll be more chewy like American cookies, or longer if you want a more traditional digestive style.

  8. 8

    Leave to cool for 5 minutes in the tray then transfer to a wire cooling rack, idk how long they take to go stale but don't worry they're gonna get eaten pretty quick
