I started making these cookies after being diagnosed with diabetes. Giving up carbs and sugar became less painful with this tasty snack.
Steps

Cream butter, stevia sugar substitute, egg yolks, vanilla extract, and almond extract together in stand mixer.

In a separate bowl combine all dry ingredients except for sliced almonds.

Mix dry ingredients into wet gradually increasing speed until well mixed.

Fold in sliced almonds at low speed.

Form into 1" balls on parchment lined baking sheet.

Use a spatula to flatten balls to about 1/4" thickness.

Bake at 350 F. degrees for 15 minutes.

Remove and cool on wire rack before eating. Makes about 30 cookies.
