The longer you marinate the fennel in this one, the better! We let it soak for almost five hours. Definitely worth it!

Slice the fennel as thinly as you can.

In a bowl, whisk together honey and lemon juice, until the honey dissolves. Add the olive oil, salt and pepper to taste, and whisk until it emulsifies. Place the fennel in this marinade and let sit for as long as you can (we did five hours).

Toast the bread, spread cream cheese on in, add salmon. Top off with the marinated fennel and garnish with some fennel twigs. Enjoy!
