Raj Kachori / Bhel Kachori

Raj Kachori is a type of a chaat which is also known as bhel kachori. Plain kachori is filled with different kind of chutneys along with potatoes, puffed rice, sev and bundi. Onion, coriander and pomegranate seeds are also added to it. All these things make a very delicious combination. This is a kind of easy and delicious snack for which all the things can be prepared in advance and you just have to assemble it at the time of serving. It can be served as a snack, starter or a light meal.

Mix all-purpose flour, semolina, salt, baking powder, and oil in a bowl. Now start adding water little by little and make a medium consistency dough like what we make for paratha. I have used 1/4 cup + 1/2 tbsp water to make this dough. Knead the dough for 3 to 4 minutes. Cover and keep it for 15 to 20 minutes to rest.

Again knead the dough for 2 - 3 minutes so that it becomes smooth. Now divide it into 8 equal portions. I have doubled the measurements so that I can make 16 Kachori out of it. Now take a dough ball and roll it into a medium-thick circle of 3 inch diameter.

Heat oil in a frying pan and when the oil is hot add rolled kachori to it. When it puffs up lower the heat and fry it on low heat until golden brown in colour from both sides. This takes 2 - 3 minutes on low heat each side. Fry it patiently to get crispy kachoris.

Prepare all the kachoris in the the same way. Let it cool down. After it gets completely cold, it becomes crispy. Store it in an airtight container.

To make kurmura, heat oil in a pan and add mustard seeds. When it crackles, add hing, turmeric powder and kurmura to it and mix it well. Add red chilli powder and salt to it and give it a good mix. Store it in an airtight container after it cools down completely.

Now mix kurmura, sev and boondi in a bowl. Mix everything under masala to sprinkle in a bowl and keep it ready.

Now take a kachori and make a whole from the top. Add chutneys to it then add some onion, potatoes, and kumara mixture to it. Now add sweetened yogurt, mint coriander chutney, garlic chutney and date tamarind chutney to it. Sprinkle some onions, coriander leaves and pomegranate seeds on top. Add some sev on top to garnish and sprinkle the prepared masala. You can adjust the amount of chutneys and sweetened yogurt according to your liking. You can even add raw mango in season.

Serve delicious raj kachori/ bhel kachori as a snack, starter or a light meal.
