Bacalao is one of the classic dishes for Holy Week. Besides being expensive, it requires a salting process that makes it hard to prepare. This recipe is inspired by its flavor but is much easier, more nutritious, and delicious.
My Style 'Fake' Bacalao with Tuna
Bacalao is one of the classic dishes for Holy Week. Besides being expensive, it requires a salting process that makes it hard to prepare. This recipe is inspired by its flavor but is much easier, more nutritious, and delicious.

In a pot, add the vegetable oil and olive oil and heat. Add the diced onion, tomato, and bell pepper.

Cook over high heat for two minutes, then add salt, sugar, and a splash of white wine vinegar.

Stir constantly until the onion caramelizes and the tomato breaks down. Next, add the paprika or Sibarita seasoning, black pepper, and ají panca paste. Continue stirring.

In a separate pot, boil the potato cubes (about 1/2 inch each). It's best to do this at the beginning so the potatoes are ready for the recipe.

Once the potatoes are cooked, drain them and set aside. Add the tuna with its oil to the onion mixture on the stove and stir. Then gently add the potatoes and mix carefully so they don't break apart.

Add the finely chopped parsley, adjust the seasoning, and serve with white rice.
