Ingredients

7 servings
  • Curry paste
  • 2Capsicums
  • Bock choi
  • 1firm block of tofu
  • 3small eggplants or 1 large eggplant
  • 1 bagbutton mushrooms
  • 7 clovesGarlic
  • 1 knobginger
  • Coconut cream
  • Bamboo shoots 2 small tins
  • 2small tins of water chestnuts
  • 1 bunchcoriander
  • Onions
  • leavesCurry
  • leavesKaffire lime
  • Lemongrass
  • Salt pepper
  • 3 teaspoonscurry powder
  • 1caten of vegetable broth

Steps

  1. 1

    With block of tofu cut into cubes and marinate

  2. 2

    Then transfure tofu to a hot pan to quickly sear them

  3. 3

    Arfter they have been satisfactorily seared remove them from the pan

  4. 4

    Then add in oil garlic ginger and lemongrass

  5. 5

    Then add capcicum mushrooms and eggplants

  6. 6

    Stir unil read then add in coconut milk and veggie stock

  7. 7

    Add in bock coi water chestnuts an bamboo shoots

  8. 8

    Cook until ready and serve with rice
