Wash and finely chop the cabbage. Sprinkle with about 1 tablespoon plus 1 teaspoon salt (20 grams) and mix well to draw out the moisture.

Finely chop the green onions and mix them into the cabbage.

Finely chop the carrot and add it to the cabbage mixture.

Let the vegetables sit for about 30 minutes to release more water, then squeeze them dry by hand and place in a separate bowl.

Mince or grate the ginger and add it to the ground pork to remove any odor. Then add the rice wine, soy sauce, and white pepper, and mix well.

Mix the vegetable mixture into the ground pork. Your dumpling filling is now ready.

Prepare a container for the dumplings and sprinkle a little flour on top to prevent sticking.

Scoop a small ball of filling with a spoon and place it in the center of a dumpling wrapper. Fold the wrapper in half and seal the edges tightly.

You can cook the dumplings right away or freeze them for later!
