Cowrie/ Kouri (Handmade cowrie shell shaped noodles) in Soup

No worries if you don't have ready to cook noodles at home !
This is very popular in the Nepali and Tibetan community of Darjeeling, we have it for lunch & dinner like thukpa by adding it in soup like the noodles and call it " Cowrie ko Jhol " & also cook for breakfast along with soaked Kala Chana or fresh peas & potato ....we generally mix both WWF and All-purpose flour or you can simply make with All-purpose flour only ...you can skip the egg but I love adding it as it enhances the taste of the cowrie.
The same recipe , you can make the long noodles also.

Mix the flours, salt first and then add in the egg, mix it, after that add water little by little and form a hard dough. Cover and keep it to rest for half an hour.

Dust a tray with maida / atta & Then take tiny bit of the dough in your palm, press and make a depression and roll it and keep it in the tray...in this way make cowrie shell noodles with the whole kneaded dough...keep the shells covered with maida to prevent it from drying.

Once done, boil enough water in a big pan add salt, once it comes to boil add the prepared Cowrie shell noodles, add few drops of veg oil, mix with gentle hands and cook for about 10 minutes...as it starts cooking it will start floating....drain it...wash it in running cold water....apply few drops of oil to prevent it from sticking if you are going to have after sometimes.

Cut the carrot and beans to suit the shape and size of the Cowrie/ Kowri. - 6
Put the boiled and cooked Kouri, mutton and veg toppings in a bowl and pour strained soup / broth in it and garnish with chopped green onion, coriander green chillies, Soya sauce, Chilli Vinegar etc as per taste and serve hot !!!!
