Chocolate Soufflé

In a heatproof bowl set over a pot of simmering water, melt the chocolate, cocoa powder, and butter together.

Beat the egg whites until stiff peaks form. In a separate bowl, mix the sugar into the egg yolks.

Butter the inside of your soufflé ramekin all the way to the top, then add sugar and rotate the ramekin to coat the sides. Tap out any excess sugar. Gently fold the melted chocolate mixture into the egg yolks. Stir gently.

Add the beaten egg whites in two additions, folding gently each time. Pour the mixture into your prepared ramekins.

Bake in a preheated oven at 400°F (200°C) for 10 minutes.
