This is a very simple and easy to make dish with Spinach and boiled Potatoes. I have used minimal available ingredients with me. The taste and flavour of minced garlic and green chili with Spinach and Potato is amazing.

This is a very simple and easy to make dish with Spinach and boiled Potatoes. I have used minimal available ingredients with me. The taste and flavour of minced garlic and green chili with Spinach and Potato is amazing.

Steps

Clean, wash, dry and chop spinach leaves and their stems separately.

Heat oil in a pan. Add mustard seeds and allow to splutter. Saute minced garlic, chopped onion and chili till they are aromatic leaving the rawness.

Mix the chopped spinach stems and tomatoes and cook till softer.

Add chopped Spinach leaves and chopped boiled potatoes. Saute for a minute and add salt.

Cook till spinach leaves are done. Serve hot with Roti or as a side dish with steamed rice.
