Ingredients

6 servings
  1. 1/2 lbGreen Chiles
  2. 1onion chopped
  3. 2-3 tspchopped garlic
  4. 1/4 tspCumin
  5. 4 cupsChicken stock
  6. 1/2 lbUnseasoned Pulled Pork
  7. 1/2 canchopped tomatoes

Cooking Instructions

  1. 1

    In a medium sauce pan, saute the onion and garlic in the oil over medium-high heat, until tender (about 3 minutes).

    Stir in the flour, cumin, salt and pepper and cook over medium heat, stirring, for 2 minutes.

    Stir in the stock and simmer until thick and smooth.

    Puree a small amount of chiles and add to sauce

  5. 5

    Chop remaining green chiles to desired consistency and add to sauce

  6. 6

    Add tomatoes and pork and additional stock to desired consistancy.

  7. 7

    Saute for 15 to 20 minutes
