Chilli-Coriander Rice (khichu)

Wash and soak rice for 15-20 minutes. Remove the water and keep aside the rice.

In a mixer jar, coarsely grind the coriander leaves and chillies. Keep aside.

Heat 3 cups water in a vessel, once the water starts to boil, add salt, sesame seeds, baking soda and chilli-coriander paste. Stir and add rice to it.

Cover and cook on medium flame for 12-15 minutes or till the rice is cooked. Keep stirring in between to avoid rice sticking to the vessel. You can add more water if required.

Turn off the flame and Serve hot with ghee or oil.
