Peel the irish then cut into small cubes,wash them in water to remove excess starch,then drain the excess water

Meanwhile heat oil on medium heat till the oil is hot enough

Fry the irish then set aside after they are crunchy.

In a different pan heat oil,add in onion cubes then add tomatoes cook till all the juices are released then add the fried irish cubes and stir for 3 mins till well coated with the tomato mixture,serve while hot.
