Ingredients

60 minutes
Serves 8 servings
  • 2 1/2 cupsalmond flour (250 grams)
  • 1/2 cupsugar (100 grams; traditionally, use 1 1/4 cups/250 grams if you like it very sweet)
  • 5large eggs
  • Grated zest of 1 lemon
  • 1 teaspoonground cinnamon (optional; I skipped it so the main flavor is almond)
  • Powdered sugar for dusting
  • 1stencil of the Cross of Santiago

    Gather all the ingredients.

    Mix the almond flour with the grated lemon zest (and cinnamon, if using) using a spatula.

    Add the sugar (100 grams is about 4 to 5 tablespoons) and mix well.

    Beat the eggs thoroughly and add the yolks, then beat again.

    Preheat the oven to 340°F (170°C).

    Gradually add the beaten eggs to the bowl with the dry ingredients, stirring gently with a spatula. Once incorporated, add more egg and mix gently until fully combined.

    Grease and flour the baking pan.

    Pour the batter into the prepared pan.

    Bake for 35-40 minutes at 340°F (170°C), using both upper and lower heat. Place the pan on the lower rack of the oven.

    Once the cake has cooled to room temperature, decorate with powdered sugar. Traditionally, use the Cross of Santiago stencil.

    You’re going to love it, just like we did! It’s not hard to make at all. This was my first time making it, and I can assure you: the almond flavor is amazing. Here it is.
