First, clean the beans by soaking it for about 30 minutes. This will soften it for easy blending and peeling. Transfer the soaked beans to a blender, add water and run the blender for about a minute. Transfer to a bowl and rubb the beans between your palm several times. Add enough water and strain in a colander to remove the beans skin. Repeat the process until the beans is clean. Wash the peppers and onions. Add to the beans.

Blend the beans until smooth. Transfer to a mixing bowl. Add chicken stock and stir.

Add seasoning cube, salt and vegetable oil. Add about 1/2 cup water if the consistency is too thick. What you are looking for is a not too thick and not too light consistency.

Clean the muffin tray and grease with oil. Scoop the beans mix into the holes. Add boiled egg and cooked kidney to each hole. Cover the muffin tray with foil. This is to keep the the moi moi moist and prevent drying out.

Preheat the oven. Pour hot water in the oven tray (to create a moist environment while it bakes) then place the muffin tray in it. Bake for 40 minutes or until a skewer comes out clean.

Serve with pap, oats, pudding or rice. Enjoy😍
