Ingredients

6-8 servings
  1. 8-10fresh tomatoes, peeled and diced
  2. 1medium onion, diced
  3. 2garlic cloves, finely diced
  4. Salt to taste
  5. Ground black pepper to taste
  6. 2-3 tbspolive oil
  7. 1 1/2 cupslong grain rice
  8. 2 tbspfresh parsley, finely chopped
  9. 350 mlstock made with one vegetable or chicken stock cube

Steps

    Heat the olive oil over medium heat.

  2. 2

    Add the onions and fry for 3-4 minutes, then add the garlic and fry for another minute.

  3. 3

    Add the tomatoes and parsley. Cook for 8-10 minutes, stirring occasionally.

  4. 4

    Add the rice, season with salt and pepper then cook for another 5 minutes.

  5. 5

    Add the stock and cover with lid (leave a small gap for steam to escape from). Continue to cook and stir occasionally until cooked and liquid has almost evaporated. Add a splash of water if the rice needs cooking a little longer if it starts to dry out.
