A super healthy and delicious sweet and tangy salad made of couscous, cucumber, carrot, bell peppers, letuce, tomatoes, herbs and pomegranate arils.

Soak 1/3 cup of couscous with 1/2 cup of hot water for 15 minutes.

Wash and cut all the vegetables in small cubes.

Also chop herbs and add in.

Make a salad dressing with 1 tablespoon apple cider vinegar, 1 tablespoon soya sauce, 1 tablespoon of.olive oil, 1/2 teaspoon chilli flakes, 1/2 teaspoon sumac powder/chat masala, 1/2 teaspoon mint powder 1 teaspoon honey and salt to taste.

Cover and keep aside for 10 minute to release flavours.

At the time of serving, take a big mixing bowl and add in all the chopped vegetables and herbs.

Also add in soaked couscous, some pomegranate arils. Mix nicely.

At last take big lettuce leaves that looks like bowls.

Spoon salad to the lettuce bowls and serve immediately.
