Ingredients

  1. 300 gmssoya chaap
  2. 3/4 cupmustard oil
  3. 3 tbspcoarsely ground ginger
  4. 3 tbspcoarsely ground garlic
  5. 3 tbspcoarsely ground onions
  6. 1 1/2 tspKashmiri red chilli powder
  7. 1 tspsalt
  8. 2 tbspjeera powder
  9. 2 tbspdhania powder
  10. 4 tbspwhite vinegar
  11. 1 tspgaram masala
  12. 1 tspkasoori methi
  13. For the marinade
  14. 1/2 tspsalt
  15. 1/2 tspKashmiri red chilli powder
  16. 1 tsplemon juice

    Remove the sticks from the soya chaap and cut them into 1" pieces. You can prepare it on the bone as well, but boneless is ideal.

  2. 2

    To marinate the soya chaap, add 1/2 tsp salt, 1/2 tsp Kashmiri red chilli powder, and 1 tsp lemon juice. Mix well and let it marinate for about an hour.

  3. 3

    Heat mustard oil to the smoking point. Turn off the heat and let it cool a bit.

  4. 4

    Deep fry the chaap pieces on medium heat till they are golden brown. Remove them on a plate and keep aside.

  5. 5

    In the same oil, add in the ginger first since it takes time to cook. Then add in garlic. Cook for a minute.

  6. 6

    Add in the onions. When it starts to change color, add in the dry masalas - Kashmiri red chilli powder, jeera powder, dhania powder and salt. Mix well.

    Add in the white vinegar.

  8. 8

    Add in the fried chaap pieces and mix until well coated.

  9. 9

    Add in the kasoori methi and garam masala. Mix well.

  10. 10

    Cover with a lid and cook for a few minutes so that the chaap pieces absorb the masala.

    The Achari Soya Chaap is ready to serve.
