I’ve been wanting to make a dairy-free flan, but this week I don’t have any plant-based milks on hand. So, I decided to try this mini sugar-free flan in the microwave. While making the caramel can be a bit tricky—especially since new sweeteners don’t caramelize well—this recipe is a super quick way to satisfy your craving! You only need 3 ingredients!

I’ve been wanting to make a dairy-free flan, but this week I don’t have any plant-based milks on hand. So, I decided to try this mini sugar-free flan in the microwave. While making the caramel can be a bit tricky—especially since new sweeteners don’t caramelize well—this recipe is a super quick way to satisfy your craving! You only need 3 ingredients!

Place 3 packets of sweetener in a ramekin. Add just enough water to cover (about 1 teaspoon). It’s important to use a ramekin, not just any mug, since some mugs can crack from the heat. The sweetener should be sucralose, as other sweeteners won’t caramelize. You can also substitute with sugar-free corn syrup if you prefer.

Microwave in 30-second intervals until you get a caramel. For me, it took about 5 intervals. If the ramekin gets too hot, let it cool a bit before continuing.

In a separate bowl, mix the egg, the remaining packet of sweetener, vanilla extract, and milk. I warmed the milk in the microwave for about 20 seconds before mixing.

Pour the mixture into the ramekin through a strainer. Microwave at 30% power for about 2 minutes, splitting the time into 2 intervals to avoid overcooking. Let it cool completely, then unmold. I didn’t use much caramel since this version is a bit sweeter than usual, but if you want more, you can double the caramel ingredients.
