It's simply an exquisite mixture of puffed rice, sev, papdi/Puri, peanuts, with onions and potatoes and spiced up with sweet & sour chutney and spicy coriander chutney.
In today's recipe I have replaced puffed rice with crispy fried macaroni.
Yes you read that right... Macaroni is the main ingredient in this recipe. The macaroni boiled and fried becomes very crispy and crunchy and makes up for an amazing bhel ingredient.

Ingredients

  1. 1 cupmacaroni
  2. For crispy fried macaroni
  3. 1 cupmacaroni
  4. 4 cupswater
  5. 1 tbspoil
  6. 1 TSPsalt
  7. 2 tbspmaida/All-purpose Flour
  8. as neededOil to deep fry
  9. 1 TSPsalt
  10. 1 TSPchat masala
  11. 1/2 Tspred chilli powder
  12. For the bhel
  13. 1 cupfried macaroni
  14. 1/4 cupsev
  15. 1/4 cuppapdi/ puri
  16. 1/4 cuproasted peanuts
  17. 1small onion chopped
  18. 1small tomato chopped
  19. 1small potato boiled peeled and chopped
  20. 1/4 cupchopped green coriander
  21. 1green chillies chopped optional
  22. 2-3 tbsptamarind chutney
  23. 2-3 tbspgreen chutney
  24. 1/2 Tspsalt
  25. 1 TSPchat masala
  26. 1-2 tbsplemon juice
  27. 2-3 tbspchopped green coriander for garnish
  28. 1/4 cupnylon sev for garnish

Steps

30-40 minutes
  1. 1

    We will first make the crispy fried macaroni.

    Boil 4 cups of water with salt and oil. Add the macaroni and cook for 10 minutes or till done. Drain and refresh in cold water.

    Heat oil in a kadhai. Let the macaroni cool down and add 2 tbsp of maida and mix well.

    Deep fry the macaroni in batches till golden and crisp. Drain on an absorbent paper.

    Let it cool a bit and add salt, chat masala and red chilli powder. Mix well. Cool completely. You can store it in am airtight container and eat it as a snack as well.

    To make the bhel, in a big mixing bowl add the Fried macaroni, sev, papdi and roasted peanuts.

    Add the tomatoes, Onion, boiled potatoes and chopped green coriander. You can also add chopped green chillies. I didn't as I was making it for the kids.

    Add the chutnies, salt, chat masala and lemon juice. Mix well.

    Garnish with sev and chopped green coriander. Serve immediately and enjoy.
