Steps

Peel and cut the yam in medium sizes

Rinse the yam and put in a pot, Add a little amount of water and salt then allow the yam to cook

Pour out the water and cut the yam into smaller sizes and desired shape

In a bowl break your eggs, add a little amount of salt and whisk (you can add onion if you want)

Place a pan with oil on the cooker and allow the oil to be a bit hot, pick a yam and fold in the egg then put in the oil to fry until it's golden colour then flip the other side until it turns golden too and then take out and place in the colander to drain the excess oil

Serve warm with sauce or pepper and drink
