Steps

Wash mung dal and rice separately and drain the water.
In a pan heat 1tsp ghee add mung daal and roast till golden and aromatic. - 2
Now heat a pressure cooker add 5 cups of water. When water comes to a boil add roasted mung daal, cook it on low-medium flame, do not cover the cooker.

Meanwhile, again heat 2tbsp ghee in a pan, splattered 1tsp Cummin seeds, asafoetida, bay leaf, cardamom, cinnamon, chili, and clove.
Add ginger and chopped vegetables, stir, and cook till vegetables soften. - 4
Now add washed rice mix well, then add turmeric powder, coriander powder, Cummin powder, garam masala and salt.
Stir and cook for 5 minutes medium-high flame. - 5
Add the rice to the same cooker and adjust salt. Cover with lid and cook until one whistle. Keep the flame on medium-high. Allow the cooker to be cool. Open the lid stir and add some more boiled water if required.
Khichdi is ready.
In a tadka pan heat 1tbsp ghee and splattered Cummin seeds, chili, and curry leaves.
Add tadka over khichri before serving. - 6
Serve hot with Pickle, chokha and papad.
