Delicious Macrobiotic Scones

When I was breast feeding, I was desperate for sweets… But I had to cut out butter and refined sugar because I used to get mastitis often. Then I thought that the macrobiotic sweets should be ok, so I made my favorite scones. Enjoy the lovely flavor of the flour and the sweetness of dried fruits and nuts.

When you want to reduce the sweetness, use soy milk instead of apple juice. If you want to make them sweet and rich, combine apple juice and soy milk with your desired ratio to make up 80 ml in total. Add any nuts or fruits you like, and as much as you want. I add a generous amount of both. Recipe by *porin*

Ingredients

9 servings
  1. 150 grams☆Wheat flour (cake flour)
  2. 50 grams☆Whole wheat flour
  3. 1 tbsp☆Baking powder (aluminum-free)
  4. 1 pinch☆Salt
  5. 50 ml★Canola oil
  6. 80 ml★Apple juice (or soy milk)
  7. 1 tbsp★Maple syrup
  8. 1■Nuts: walnuts, almond, etc.
  9. 1■Dried fruits: apricots, etc.

Steps

  1. 1

    《Preparation》*Chop the ■ nuts and dried fruits. *Preheat the oven to 180℃.

  2. 2

    Combine the ☆ dry ingredients in a bowl and mix well with a whisk.

  3. 3

    Put the ★ wet ingredients in a separate bowl and mix well.

  4. 4

    Add Step 3 into Step 2, and fold in the batter gently using a fork or spatula, making sure you don't knead it.

  5. 5

    While the dough is still a bit floury, add the ■ nuts and dried fruits, and fold it in gently.

  6. 6

    Divide the dough into 9 portions and squeeze each into a ball. Don't knead them even if they are a bit floury. Or you can roll it out and cut into shapes using a cookie cutter.

  7. 7

    Place the scones on a baking tray, brush with soy milk (not listed), and bake in the oven for 15 to 20 minutes at 180℃.
