McPhee's Cream of Tomato and Basil Soup

Everybuddy's National Favourite Italian soup is back with The McPhee's Company Modern twist. This hearty creamy soup will make you always want to crave for more.

McPhee's Cream of Tomato and Basil Soup

Heat the butter or oil in a thick-bottomed pot or soup pot. Once the fat is bubbling, add diced onions, carrots and garlic. Sweat them off for about 5 minutes until soften and lightly browned.

Add the Fresh tomatoes and cook them for 5 minutes until soften.

Mix in the flour and tomato puree and cook to a sandy texture.

Gradully add the veg stock into the pot and stir to the boil. - (If the colour of the soup is lacking, add some more tomato puree soon after it has come to the boil)

Add the bouquet garni and season lightly with salt and pepper. Leave the soup to simmer on low heat for approximately 1 hour and skim when it's neccesery. - (If the soup is thickening during the simmering process add some water or stock).

After simmering for a hour remove the bouquet garni from the soup and discard. Liquidise the soup in a food processor or a hand blender until smooth. Return the soup to the hob in a clean pot.

Gradulally add the double cream and the basil, mix throughtly until it's combined. Then fix the seasoning with tomato puree, salt and pepper until you're happy with the flavour and texture.

For Croutons: trim off the crusts from the bread slices and discard them. Cut the remaining crustless bread slices into small squares.

Next placee the diced bread into the deep fryer and fry them until golden brown.

Once the croutons had deep-fried. place them onto a tray with some kitchen roll to all of the grease off. Then Season the croutons with salt and a little bit of pepper - (but not too much pepper or else everybody at the dinner table will be sneezing all day long LOL :) Mix them in throughly with seasoning.

Plate up the soup with the croutons on top, enjoy :)

Presentation Tips: make a swirl on top of the soup with double cream, sparkle on the basil neatly and then place about - (5-7 small croutons) to finish the soup off Enjoy :)
